O TAMA CAREY

O Tama Carey of Darlinghurst's hatted Lankan Filling Station is returning as Creative director for Grazing Down the Lachlan 2022, serving up a fusion of locally farmed and foraged produce with traditional bush tucker.

After a two year hiatus (thanks Covid), O Tama will be set to deliver an exciting, new take on Grazing Down the Lachlan's successful long lunch format in 2022.

Described as one of Australia's most intriguing chefs, O Tama opend her highly-anticipated Darlinghurst's hopper restaurant, Lankan Filling Station in 2018.

O Tama's first solo venture has certainly lived up to the hype - awarded a chef's hat in The Sydney Morning Herald's Good Food Guide 2019 and a spot in The Weekend Australian Magazine's Hot 50 Restaurants after only a few months trading.

So what can Grazers expect in 2022?

While the dishes are kept secret until the day, O Tama will draw upon local history during the gold rush era for inspiration for this year’s menu.

“During the gold rushes of 1850s and 60s, thousands of Chinese-born people migrated to the region. With them, they brought their cuisine”, O Tama said.

“The dishes will incorporate ideas of Chinese dishes found in regional restaurants of Australia with touches of native ingredients and flavours. As we have done in previous years, our ingredients and produce will be sourced locally.”
